Fluffy Zucchini Bread with Organic Greens Booster & Protein

Ingredients
- 2 scoops Vanilla Life Shake™
- 4 scoops Organic Greens Booster
- 2 cups grated zucchini (squeeze out the water)
- 1 large egg
- 1/2 cup unsweetened applesauce
- 3/4 cup raw honey
- 1 tsp vanilla extract
- 2 tsp cinnamon
- 1 tsp baking soda
- 2 tsp baking powder
- 1/2 tsp salt
- 1.5 cups whole wheat flour
- Extra virgin olive oil (to coat the loaf pan)
- Optional add-ons: chocolate chips, nuts, etc.
Directions
Step 1 – Mix Wet Ingredients
In a large mixing bowl, add Vanilla Life Shake™, Organic Greens Booster, egg, applesauce, honey, vanilla, cinnamon, baking soda, baking powder, and salt. Whisk until fully combined.
Step 2 – Add Zucchini and Flour
Stir in the grated zucchini. Gently fold in the whole wheat flour with a spatula until just combined—avoid overmixing.
Step 3 – Prepare Loaf Pan
Preheat your oven to 350°F. Line a 9×5-inch loaf pan with parchment paper and lightly coat with olive oil.
Step 4 – Bake
Pour the batter into the prepared pan. Bake for 60 minutes, or until a toothpick inserted in the center comes out clean.
Step 5 – Cool and Serve
Remove from the oven and transfer to a cooling rack for 10 minutes. Carefully remove the bread from the pan and allow it to cool completely before slicing.
